Pizza toasts with smoked chicken and mozzarella

Ingredients

2 slices of whole wheat bread
4 tbsp of strained tomato passata (tetra pak)
A pinch of salt
A pinch of pepper
1 tbsp of paprika powder
2 tsp of dried thyme
A handful of fresh oregano
50g of mozzarella
10 cherry tomatoes
0.5 red onion
100g of chicken breast
1 tablespoon of fresh basil

Instructions:

Preheat: Preheat the oven to 200°C.
Toast: Lightly toast the slices of whole wheat bread in a toaster or under the grill.
Passata: Place the toasted slices of bread on a baking sheet lined with parchment paper and spread 2 tablespoons of passata on each slice.
Add chicken: Top the toasts with slices of smoked chicken breast.
Onion and mozzarella Spread the thinly sliced red onion and grated mozzarella over the toasts.
Tomatoes: Add the cherry tomatoes, halved, on top of the cheese and onion.
Spices: Sprinkle with fresh oregano, dried thyme, and a pinch of smoked paprika powder. Season with pepper and salt to taste.
Baking: Bake the pizza toasts in the preheated oven for 10-15 minutes, until the cheese is melted and lightly golden.
Finish and serve: Garnish with a few fresh basil leaves and serve immediately.
